Wild Waffle Recipes

Blue Corn Waffles

  • 1 12 cups blue corn meal
  • 3/4 cup flour
  • 1 Tbs sugar
  • 2 Tsp baking powder
  • 1/2 Tsp salt
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 6 Tbs melted butter

In a small bowl, mix the corn meal flour, sugar, baking powder, and salt. Set aside. In another bowl, separate the eggs and whip the egg whites until they form stiff peaks. Keep the egg yolks and mix with the melted butter. Slowly add the dry mixture to the wet mixture, stirring until just mixed. Apple Fritter Doughnut Waffles

  • 2 cups flour
  • 3/4 cup sugar
  • 2 Tsp baking powder
  • 1/2 Tsp baking soda
  • 1 Tsp salt
  • 2 Tsp cinnamon
  • 3/4 cup buttermilk
  • 1/4 cup melted butter
  • 2 eggs
  • 1 Tsp vanilla extract
  • 2 cups chopped apples
  • Vegetable oil

To make these dessert-style waffles, mix the dry ingredients together in a medium sized-bowl and then set aside. In a separate bowl, break open the eggs, separating the yolks form the whites. Mix the egg yolks with the melted butter and then slowly add to the dry ingredients, mixing thoroughly to ensure that you have a moist batter. Fold in the chopped apples and vanilla extract and then fold in the egg whites.

Cook waffles on medium in a waffle iron until lightly toasted, about 3-4 minutes. After removing waffles from iron, separate them into quarters and put on a plate. In a medium saucepan, heat oil and then add waffle quarters to hot oil. Fry waffle quarters in hot oil until golden brown, flipping as needed and then remove from oil and drain on paper towel. Serve with a glaze or syrup.

Lemon Waffles

  • 4 eggs separated
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 cup milk
  • 1 tbs lemon juice
  • Grated peel of one lemon
  • 1/4 cup melted butter
  • 1 1/4 cup flour
  • 1/2 tsp baking powder

This lightly sweet waffle recipe is a great idea for a summer party and can be served with a lemon curd or by itself. Start by separating your eggs and setting the whites aside. Place the yolks in a medium bowl and add the sugar and salt, mixing to combine ingredients. Add the milk, lemon juice and peel, and melted butter. After ingredients have been thoroughly mixed, add in the flour and the baking powder. Set aside. Whip egg whites until they reach stiff peaks and then fold into the batter.
